You may be looking for a good boneless chicken breast recipe because you know chicken breast is good for.  And it is!  Chicken breast is loaded with protein and low in fat.  It also has a nice mild flavor that can be incorporated into almost any type of meal: Southwest, Italian, Mexican, Tropical, Asian, or just good old American.

There is only one problem with chicken breast: It’s DRY!  Nobody wants to eat a tough, dried out piece of chicken.  Unfortunately, bad cooking techniques have given this fantastic cut of meat a bad name.  The good news is that cooking the perfect chicken is easy (even for the new homemaker), once you know how.

Before getting into the specific recipes for chicken, make sure you know the basic cooking technique.

  1. Make sure your chicken is completely thawed, not frozen.
  2. Preheat your oven to 350 degrees.
  3. Place the chicken on a piece of aluminum foil and wrap the foil loosly around the chicken, forming a little packet.
  4. Place the foil-wrapped chicken on a baking sheet.
  5. Put it in the oven at 350 degrees for 40 minutes.

No need to babysit your chicken here, just come back when the timer rings!  When you open the foil packet, you wlil be amazed to see how juicy the chicken is.  It will also be whitish in color, since you have not browned it in a pan or on the grill.

Let the chicken sit for a minute or two before you cut into it, so that the juices don’t all run out.  If you want to brown your chicken now, you can, though Holly Housewife prefers not to.  Any additional cooking you do will take away from the tender, juicy piece of meat you have just prepared.
